Mediterranean Baked Feta Eggs

Ingredients
  

  • For the Baked Feta Eggs
  • 8 oz block feta cheese
  • 2 cups cherry tomatoes halved
  • 2 cups fresh spinach
  • 4 large eggs
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes optional
  • Salt and pepper to taste
  • For Garnish
  • Fresh parsley chopped
  • Crusty bread or pita for serving

Instructions
 

  • Step 1: Preheat and Prepare
  • Preheat your oven to 400°F (200°C). In an oven-safe skillet or baking dish, arrange the block of feta cheese in the center. Surround it with the cherry tomatoes and spinach. Drizzle with olive oil and sprinkle with oregano, red pepper flakes (if using), salt, and pepper.
  • Step 2: Bake
  • Bake for 10 minutes, or until the tomatoes are softened and the feta is slightly melted.
  • Step 3: Add the Eggs
  • Remove the skillet from the oven and create 4 small wells in the mixture. Crack an egg into each well. Return the skillet to the oven and bake for another 8-10 minutes, or until the egg whites are set but the yolks are still runny.
  • Step 4: Garnish & Serve
  • Garnish with fresh parsley and serve hot with crusty bread or pita on the side.
