Preparation
- In a large bowl, mash the ripe bananas with a fork until smooth.
- Add the rolled oats, chia seeds, vanilla extract, almond butter, cinnamon, and a pinch of salt to the mashed bananas. Mix well until combined.
- If using, fold in the chocolate chips or nuts into the mixture.
- Using your hands, scoop a tablespoon of the mixture and roll it into a ball. Repeat until all bites are formed.
- Place the energy bites on a lined baking tray and refrigerate for at least 30 minutes to firm up.
Serving
- Enjoy immediately or store in an airtight container in the fridge.
Notes
Store energy bites in an airtight container in the refrigerator for up to one week; they also freeze well for up to three months.
