  • 2 pieces ripe bananas Use ripe bananas for best flavor
  • 1 cup rolled oats
  • 2 tablespoons chia seeds Packed with omega-3s, protein, and fiber
  • 1 teaspoon vanilla extract
  • 1/4 cup almond butter Can substitute with peanut butter
  • 1 teaspoon cinnamon
  • a pinch salt
Optional add-ins
  • 1/4 cup chocolate chips Or chopped nuts for added flavor

Method
 

Preparation
  1. In a large bowl, mash the ripe bananas with a fork until smooth.
  2. Add the rolled oats, chia seeds, vanilla extract, almond butter, cinnamon, and a pinch of salt to the mashed bananas. Mix well until combined.
  3. If using, fold in the chocolate chips or nuts into the mixture.
  4. Using your hands, scoop a tablespoon of the mixture and roll it into a ball. Repeat until all bites are formed.
  5. Place the energy bites on a lined baking tray and refrigerate for at least 30 minutes to firm up.
Serving
  1. Enjoy immediately or store in an airtight container in the fridge.
