Ingredients

  • - 1 lb large shrimp peeled and deveined
  • - 2 tsp Cajun seasoning
  • - 2 tbsp olive oil
  • **For the Scampi Sauce:**
  • - 3 tbsp unsalted butter
  • - 4 cloves garlic minced
  • - ½ cup chicken broth or white wine
  • - 2 tbsp fresh lemon juice
  • - ½ tsp crushed red pepper flakes optional
  • - ¼ cup chopped parsley
  • - Salt and pepper to taste

  • - 8 oz linguine or spaghetti cooked and drained

Instructions
 

  • **Season the Shrimp:**
  • - In a mixing bowl, toss the shrimp with Cajun seasoning until evenly coated.
  • **Cook the Shrimp:**
  • - Heat olive oil in a large skillet over medium-high heat. Add shrimp and cook for 2-3 minutes per side, until they turn pink and are just cooked through. Remove the shrimp from the skillet and set aside.
  • **Make the Sauce:**
  • - In the same skillet, add butter and melt over medium heat. Add garlic and sauté for 1 minute until fragrant.
  • - Stir in chicken broth (or white wine), lemon juice, and red pepper flakes (if using). Let the sauce simmer for 2-3 minutes, allowing the flavors to meld.
  • **Combine:**
  • - Return the cooked shrimp to the skillet and toss to coat them in the sauce. Cook for 1-2 minutes until heated through.
  • **Add Pasta (if using):**
  • - If serving with pasta, toss the cooked linguine or spaghetti in the skillet with the shrimp and sauce. Mix well to combine.
