Ingredients
  

Burrito Filling
  • 1 cup cooked rice
  • 1 can black beans (drained and rinsed)
  • 1 cup shredded cheese (cheddar or a blend)
  • 1 teaspoon taco seasoning
  • 4 large flour tortillas
  • 1/2 cup salsa
  • Cooking spray or olive oil

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, combine the cooked rice, black beans, shredded cheese, and taco seasoning. Stir well until everything is evenly mixed.
Assembly
  1. Lay each tortilla flat on a clean surface. Spoon a generous portion of the filling into the center of each tortilla. Fold the sides over the filling and then roll it up tightly from the bottom.
  2. Lightly coat a baking dish with cooking spray or drizzle with olive oil. Place the burritos seam-side down in the dish. Drizzle a little extra salsa on top if desired.
Baking
  1. Bake in the preheated oven for about 20 minutes, or until the burritos are heated through and the cheese has melted.
Serving
  1. Remove from the oven, let them cool for a few minutes, and then serve them warm, topped with your favorite toppings.

Notes

Customize the filling by adding diced bell peppers, corn, or shredded chicken. Avoid overfilling to prevent bursting during baking. Cool completely before storing in an airtight container. Refrigerate for up to 4 days or freeze for 3 months. Reheat in the oven at 350°F for 15-20 minutes or microwave for 1-2 minutes.
