Baked Apple Fritters

Ingredients
  

For the Fritters
  • 1 ¾ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • cup granulated sugar
  • 1 large egg
  • ½ cup whole milk (or any milk of choice)
  • 2 tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • 1 ½ cups peeled and diced apples (use Granny Smith or Honeycrisp)
For the Glaze
  • 1 cup powdered sugar
  • 2-3 tbsp milk
  • ½ tsp vanilla extract

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and sugar.
  3. In a separate bowl, combine the egg, milk, melted butter, and vanilla extract. Stir the wet ingredients into the dry ingredients until just combined.
  4. Fold in the diced apples.
  5. Scoop about ¼ cup of the batter for each fritter onto the prepared baking sheet, leaving space between each one. Flatten slightly with the back of a spoon.
Baking
  1. Bake for 12-15 minutes or until the fritters are golden and set. Transfer to a cooling rack.
Glazing
  1. To make the glaze, whisk together powdered sugar, milk, and vanilla until smooth. Drizzle or brush the glaze over the fritters once they are slightly cooled.

Notes

For extra flavor, toss the diced apples with a pinch of cinnamon and sugar before adding them to the batter. Use a cookie scoop for evenly sized fritters. Let the glaze set completely for easier handling. Store in an airtight container at room temperature for up to 2 days or in the refrigerator for up to 5 days.
