  • 1 cup shredded cheddar cheese

Directions

Step 1: Cook the Kielbasa and Vegetables

Heat olive oil in a large pot or Dutch oven over medium heat. Add the sliced kielbasa and cook until browned, about 5 minutes. Remove the kielbasa and set aside. In the same pot, add the diced onion and cook until softened, about 3 minutes. Add the minced garlic and cook for another 1 minute.

Step 2: Add the Pasta and Broth

Stir in the diced tomatoes, chicken broth, pasta, smoked paprika, oregano, thyme, salt, and pepper. Bring to a boil, then reduce the heat to medium-low and simmer for 12-15 minutes, or until the pasta is tender and most of the liquid is absorbed.
