One-Pot Kielbasa Pasta

Ingredients
  

  • For the Pasta
  • 1 tablespoon olive oil
  • 1 lb kielbasa sausage sliced into rounds
  • 1 small onion diced
  • 3 cloves garlic minced
  • 1 can 14.5 oz diced tomatoes (undrained)
  • 4 cups chicken or vegetable broth
  • 12 oz penne or rotini pasta
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon dried thyme
  • Salt and pepper to taste
  • For the Creamy Sauce
  • 1 cup heavy cream or half-and-half
  • 1 cup shredded cheddar cheese
  • For Garnish
  • Fresh parsley chopped
  • Grated Parmesan cheese

Instructions
 

  • Step 1: Cook the Kielbasa and Vegetables
  • Heat olive oil in a large pot or Dutch oven over medium heat. Add the sliced kielbasa and cook until browned, about 5 minutes. Remove the kielbasa and set aside. In the same pot, add the diced onion and cook until softened, about 3 minutes. Add the minced garlic and cook for another 1 minute.
  • Step 2: Add the Pasta and Broth
  • Stir in the diced tomatoes, chicken broth, pasta, smoked paprika, oregano, thyme, salt, and pepper. Bring to a boil, then reduce the heat to medium-low and simmer for 12-15 minutes, or until the pasta is tender and most of the liquid is absorbed.
  • Step 3: Make the Creamy Sauce
  • Return the cooked kielbasa to the pot. Stir in the heavy cream and shredded cheddar cheese until the cheese is melted and the sauce is creamy.
  • Step 4: Serve & Enjoy
  • Garnish with fresh parsley and grated Parmesan cheese. Serve hot and enjoy!
