Chicken with Buttered Noodles is a simple, comforting dish that combines tender, juicy chicken with buttery, garlicky noodles for a meal that’s as delicious as it is easy to prepare.

Ingredients

For the Chicken:

  • 2 large chicken breasts (or 4 chicken thighs)
  • 2 tbsp olive oil or butter

  • 1 tsp paprika
  • 1/2 tsp dried thyme
  • Salt and pepper, to taste

For the Buttered Noodles:

  • 12 oz egg noodles (or pasta of your choice)
  • 4 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped (optional)
  • Salt and pepper, to taste

Directions

1. Cook the Noodles

  1. Bring a large pot of salted water to a boil. Add the egg noodles and cook according to package instructions until al dente.
  2. Reserve 1/2 cup of pasta water, then drain the noodles and set aside.

2. Prepare the Chicken

  1. While the noodles are cooking, season both sides of the chicken with garlic powder, onion powder, paprika, thyme, salt, and pepper.
  2. Heat olive oil or butter in a large skillet over medium heat.
  3. Add the chicken and cook for 6–7 minutes per side, or until golden brown and fully cooked (internal temperature of 165°F/74°C).
  4. Remove the chicken from the skillet and let it rest for 5 minutes. Slice or shred the chicken as desired.

3. Make the Buttered Noodles

  1. In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1–2 minutes until fragrant.
  2. Add the cooked noodles to the skillet and toss to coat in the butter and garlic. If needed, add a splash of the reserved pasta water to loosen the sauce.
  3. Stir in Parmesan cheese and season with salt and pepper to taste.

4. Assemble the Dish

  • Serve the sliced chicken over a bed of buttered noodles. Garnish with fresh parsley and additional Parmesan cheese, if desired.
