Chicken with Buttered Noodles

Chicken with Buttered Noodles is a simple, comforting dish that combines tender, juicy chicken with buttery, garlicky noodles for a meal that’s as delicious as it is easy to prepare.

Ingredients
  

  • #### For the Chicken:
  • - 2 large chicken breasts or 4 chicken thighs
  • - 2 tbsp olive oil or butter
  • - 1 tsp garlic powder
  • - 1 tsp onion powder
  • - 1 tsp paprika
  • - 1/2 tsp dried thyme
  • - Salt and pepper to taste
  • #### For the Buttered Noodles:
  • - 12 oz egg noodles or pasta of your choice
  • - 4 tbsp unsalted butter
  • - 2 cloves garlic minced
  • - 1/4 cup grated Parmesan cheese
  • - 2 tbsp fresh parsley chopped (optional)
  • - Salt and pepper to taste

Instructions
 

  • #### 1. Cook the Noodles
  • Bring a large pot of salted water to a boil. Add the egg noodles and cook according to package instructions until al dente.
  • Reserve 1/2 cup of pasta water, then drain the noodles and set aside.
  • #### 2. Prepare the Chicken
  • While the noodles are cooking, season both sides of the chicken with garlic powder, onion powder, paprika, thyme, salt, and pepper.
  • Heat olive oil or butter in a large skillet over medium heat.
  • Add the chicken and cook for 6–7 minutes per side, or until golden brown and fully cooked (internal temperature of 165°F/74°C).
  • Remove the chicken from the skillet and let it rest for 5 minutes. Slice or shred the chicken as desired.
  • #### 3. Make the Buttered Noodles
  • In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1–2 minutes until fragrant.
  • Add the cooked noodles to the skillet and toss to coat in the butter and garlic. If needed, add a splash of the reserved pasta water to loosen the sauce.
  • Stir in Parmesan cheese and season with salt and pepper to taste.
  • #### 4. Assemble the Dish
  • - Serve the sliced chicken over a bed of buttered noodles. Garnish with fresh parsley and additional Parmesan cheese, if desired.
