  • 1 each green bell pepper, sliced

  • 1 tablespoon garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons olive oil
  • to taste salt and pepper
  • optional red pepper flakes for heat

  1. Begin by washing and slicing the zucchini and bell peppers. Cut the chicken breast into bite-sized pieces and set everything aside.
Cooking
  1. In a large skillet or wok, heat the olive oil over medium-high heat until shimmering.
  2. Add the chicken pieces to the pan. Season with salt and pepper. Stir-fry for about 5-7 minutes, or until the chicken is golden brown and cooked through.
  3. Toss in the minced garlic and ginger, followed by the zucchini and bell peppers. Stir-fry everything together for an additional 4-5 minutes until the vegetables are tender yet still crisp.
  4. Pour in the soy sauce and mix well to coat the chicken and vegetables. If you like it spicy, sprinkle in some red pepper flakes at this stage.
