Preparation
- Start by washing the zucchinis.
- Using a vegetable peeler or mandolin, slice them lengthwise into thin strips, about 1/8 inch thick.
- Sprinkle a little salt on the slices and let them sit for about 10 minutes to draw out moisture.
Baking
- While the zucchini is resting, preheat your oven to 375°F (190°C).
- In a bowl, combine ricotta cheese, chopped spinach, a pinch of salt, and pepper. Mix until the ingredients are well combined and creamy.
- Take one zucchini slice, place about a tablespoon of the ricotta mixture at the end, and roll it up tightly. Secure with a toothpick if necessary. Repeat with the remaining slices.
- Spread some marinara sauce on the bottom of a baking dish. Place the roll-ups seam-side down in the dish, and cover with more marinara sauce. Top with shredded mozzarella cheese.
- Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbling.
- Remove from the oven and let cool for a few minutes before serving. Enjoy your delicious Zucchini Roll Ups!

Top Tips: If you're not a fan of spinach, try using other leafy greens like kale or Swiss chard. Substitute ricotta with cottage cheese if desired. Let zucchini sit after salting to eliminate excess moisture. Aim for uniform, thin slices.
