Main Ingredients
  • 2 medium zucchinis, grated Make sure to squeeze to remove excess moisture.
  • 1/2 cup breadcrumbs Use gluten-free if necessary.
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • to taste salt and pepper
  • for frying tablespoons olive oil

Method
 

Preparation
  1. Wash the zucchinis thoroughly. Grate and wrap them in a clean kitchen towel to squeeze out excess liquid.
  2. In a large mixing bowl, combine the grated zucchini, breadcrumbs, Parmesan cheese, eggs, garlic powder, onion powder, salt, and pepper. Mix until well incorporated.
  3. Form small patties, about 2-3 inches in diameter. Ensure they are compact.
Cooking
  1. In a frying pan, heat a few tablespoons of olive oil over medium heat until hot but not smoking.
  2. Add the patties to the pan, cooking in batches if necessary. Fry for about 3-4 minutes on each side until golden brown.
  3. Once cooked, drain the patties on paper towels to absorb excess oil. Serve warm with your favorite toppings.

Notes

For healthier alternatives, use whole wheat breadcrumbs or ground oats. Be sure to remove as much moisture as possible from the zucchinis for better frying results. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
