Main Ingredients
  • 3 medium zucchinis, sliced Make sure zucchinis are fresh and firm.
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 cups marinara sauce
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Wash and slice the zucchinis into approximately 1/4-inch thick rounds.
  3. Sprinkle salt over the slices and let them sit for about 10 minutes to draw out moisture. Pat them dry with a paper towel.
Layering
  1. In a baking dish, spread a thin layer of marinara sauce on the bottom.
  2. Layer the zucchini slices over the sauce, then sprinkle with grated Parmesan cheese, followed by breadcrumbs. Repeat the layers until ingredients are finished, topping with the last of the marinara and a generous sprinkle of breadcrumbs and cheese.
Baking
  1. Drizzle olive oil over the top layers and sprinkle with Italian seasoning.
  2. Bake in the preheated oven for about 25-30 minutes, or until the top is golden and bubbly.
Cooling
  1. Allow it to cool for about 5 minutes before serving to help the layers set and make for easier slicing.

Notes

To customize, try adding fresh basil, more marinara, or crushed red pepper for extra flavor. Avoid overloading on marinara to prevent sogginess.
