Preparation
- Preheat your oven to 375°F (190°C).
- Wash and slice the zucchinis into thin rounds using a sharp knife or a mandoline.
- In a pan, add 1 tablespoon of olive oil, then sauté the zucchini slices for about 5–7 minutes until they’re tender. Season with salt, pepper, and garlic powder, if using.
Layering
- In a greased baking dish, layer the sautéed zucchini evenly.
- Pour half of the cream or milk over the first layer and sprinkle half of the grated cheese on top.
- Add another layer of zucchini, the rest of the cream or milk, and top with the remaining cheese.
- Sprinkle the breadcrumbs evenly over the top and drizzle with remaining olive oil.
Baking
- Bake in the preheated oven for about 30 minutes, or until the top is golden and bubbly.
- Let it cool for a few minutes before garnishing with fresh herbs and serving.
Notes
You can experiment with other cheeses like cheddar or goat cheese. Make sure to dry the zucchini slices with a paper towel before layering to prevent sogginess.
