  • 2 medium zucchinis Washed and ends cut off
  • 4 cloves garlic, minced
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Oil for frying

Method
 

Preparation
  1. Wash the zucchinis and cut the ends off. Grate them using a box grater or food processor.
  2. Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out the excess moisture.
  3. In a large mixing bowl, combine the grated zucchini, minced garlic, breadcrumbs, grated Parmesan, oregano, salt, and pepper. Mix until well incorporated.
  4. Scoop out small portions of the mixture and shape them into bite-sized patties.
Cooking
  1. In a large frying pan, heat about 1/4 inch of oil over medium heat.
  2. Check if the oil is hot enough by dropping in a small piece of the mixture; it should sizzle.
  3. Fry a few patties in the hot oil for about 3-4 minutes on each side, or until golden brown.
  4. Remove them using a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
Serving
  1. Serve warm with your favorite dip or enjoy as is.

Notes

For gluten-free options, swap breadcrumbs for crushed oats or almond flour. Ensure the oil is hot enough before frying to prevent soggy bites. Always squeeze out excess moisture from the zucchini for a perfect crunch. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 2 months.
