  • 2 medium zucchinis, grated
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • Salt and pepper to taste
  • Oil for frying

Method
 

Preparation
  1. Grate the zucchinis using a box grater or food processor. Squeeze them in a clean kitchen towel or paper towels to remove excess moisture.
  2. In a large mixing bowl, combine the grated zucchini, minced garlic, breadcrumbs, grated Parmesan cheese, and egg. Season with salt and pepper. Mix everything until well combined.
  3. Using your hands, form the mixture into small patties, roughly the size of a golf ball, and flatten them slightly.
  4. In a large frying pan, heat approximately half an inch of oil over medium heat.
Cooking
  1. Carefully place the patties in the hot oil, making sure not to overcrowd the pan. Fry each side for about 3–4 minutes or until golden brown.
  2. Once golden and crispy, use a slotted spoon to remove the bites from the pan and drain them on a paper towel-lined plate. Serve warm.

Notes

Feel free to swap out the Parmesan cheese with a different cheese of your choice, like mozzarella. Keep an eye on the frying time to ensure they don't burn. The drier the zucchini, the better the bite. Store in an airtight container for up to 3 days or freeze for up to 2 months.
