- Start by grating the zucchinis using a box grater. Place the grated zucchini into a clean kitchen towel and squeeze out any excess moisture.
- In a large bowl, combine the grated zucchini, minced garlic, breadcrumbs, Parmesan cheese, salt, and pepper. Mix well until incorporated.
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Use your hands to scoop about a tablespoon of the mixture and form it into small, round bites. Place them on the prepared baking sheet spaced about an inch apart.
- Lightly drizzle olive oil on top of each zucchini bite to ensure a golden color while baking.
- Place the baking sheet in the oven and bake for about 15-20 minutes, or until the bites are golden brown and crispy.
- Once baked, let them cool for a few minutes, then serve hot and enjoy every delicious bite!
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze them before baking for up to 2 months. Bake from frozen for an additional 5-7 minutes.
