  • 3 cloves of garlic, minced
  • 1 cup of olive oil For drizzling.
  • 1 cup of breadcrumbs Regular or gluten-free options can be used.
  • ½ cup of grated Parmesan cheese Or dairy-free alternative for vegan option.
  • ½ teaspoon of salt
  • ¼ teaspoon of black pepper

Method
 

Preparation
  1. Start by grating the zucchinis using a box grater. Place the grated zucchini into a clean kitchen towel and squeeze out any excess moisture.
  2. In a large bowl, combine the grated zucchini, minced garlic, breadcrumbs, Parmesan cheese, salt, and pepper. Mix well until incorporated.
  3. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Use your hands to scoop about a tablespoon of the mixture and form it into small, round bites. Place them on the prepared baking sheet spaced about an inch apart.
  4. Lightly drizzle olive oil on top of each zucchini bite to ensure a golden color while baking.
  5. Place the baking sheet in the oven and bake for about 15-20 minutes, or until the bites are golden brown and crispy.
  6. Once baked, let them cool for a few minutes, then serve hot and enjoy every delicious bite!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze them before baking for up to 2 months. Bake from frozen for an additional 5-7 minutes.
