Ingredients

For the Zucchini Fritters
  • 2 medium zucchinis Grated
  • 1 teaspoon salt Plus more to taste
  • 1/2 cup all-purpose flour Can substitute with gluten-free flour
  • 1/4 cup grated Parmesan cheese Can substitute with any cheese
  • 1/4 cup chopped green onions
  • 1 large egg
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • Oil for frying Oil for frying Enough to cover the bottom of the skillet
For the Garlic-Dill Yogurt Sauce
  • 1 cup plain yogurt Can use dairy-free yogurt alternative if desired
  • 1 tablespoon fresh dill Chopped
  • 1 clove garlic Minced
  • Pinch salt

Method

Preparation
  1. Wash and grate the zucchinis. Place them in a clean kitchen towel, sprinkle with salt, and let them sit for about 10 minutes to draw out excess moisture.
  2. In a large mixing bowl, combine the drained zucchini, flour, Parmesan cheese, chopped green onions, egg, black pepper, and garlic powder. Stir until a uniform mixture forms.
Cooking
  1. In a skillet, pour enough oil to cover the bottom (about 1/4 inch deep) and heat over medium-high heat.
  2. Once the oil is hot, use a spoon to drop small amounts of the zucchini mixture into the skillet. Flatten them gently with the back of the spoon. Fry on each side for about 3-4 minutes until golden brown.
  3. Transfer the fritters onto a paper towel-lined plate to drain any excess oil.
Making the Sauce
  1. In a small bowl, mix the yogurt, chopped dill, minced garlic, and a pinch of salt. Stir until well combined.
Serving
  1. Serve the fritters warm with the garlic-dill yogurt sauce for dipping.
