Preparation
- Wash and grate the zucchinis. Place them in a clean kitchen towel, sprinkle with salt, and let them sit for about 10 minutes to draw out excess moisture.
- In a large mixing bowl, combine the drained zucchini, flour, Parmesan cheese, chopped green onions, egg, black pepper, and garlic powder. Stir until a uniform mixture forms.
Cooking
- In a skillet, pour enough oil to cover the bottom (about 1/4 inch deep) and heat over medium-high heat.
- Once the oil is hot, use a spoon to drop small amounts of the zucchini mixture into the skillet. Flatten them gently with the back of the spoon. Fry on each side for about 3-4 minutes until golden brown.
- Transfer the fritters onto a paper towel-lined plate to drain any excess oil.
Making the Sauce
- In a small bowl, mix the yogurt, chopped dill, minced garlic, and a pinch of salt. Stir until well combined.
Serving
- Serve the fritters warm with the garlic-dill yogurt sauce for dipping.
Notes
You can store leftover fritters in an airtight container in the refrigerator for up to 3 days or freeze them for up to 2 months. Reheat in a preheated oven at 375°F (190°C) for about 10-15 minutes.
