Ingredients

Main Ingredients
  • 2 medium zucchinis Choose firm zucchinis for best results.
  • 1 cup all-purpose flour Can substitute with almond flour for gluten-free option.
  • 2 large eggs Beaten for coating.
  • 1 cup breadcrumbs Preferably whole wheat for added crunch.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • Salt and pepper to taste To enhance flavor.
  • Cooking spray or olive oil For baking.

Method

Preparation
  1. Preheat your oven to 425°F (220°C) to ensure even cooking and crispy fries.
  2. Wash and dry the zucchinis, then cut them into fry-shaped sticks, about 1/2 inch thick.
  3. Set up a dipping station with three bowls: one for flour, one for beaten eggs, and one for breadcrumbs mixed with garlic powder, onion powder, paprika, salt, and pepper.
Coating and Baking
  1. Dip each zucchini stick into the flour, shaking off any excess; then coat it in the beaten eggs, and finally roll in the breadcrumb mixture until fully covered.
  2. Line a baking sheet with parchment paper and spray lightly with cooking spray. Arrange the coated zucchini fries in a single layer on the sheet.
  3. Spray lightly with more cooking spray or drizzle with olive oil for extra crispiness. Bake for 20-25 minutes or until golden brown, flipping halfway through for even cooking.
Serving
  1. Allow the fries to cool slightly before serving. Enjoy with your favorite dipping sauce!

Notes

Tip: Experiment with different seasonings in the breadcrumb mixture for unique flavors. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months.
