  • 2 large zucchinis Washed and shredded
  • 1 cup mozzarella cheese, shredded For cheesy flavor
  • 1/2 cup Parmesan cheese, grated Adds depth of flavor
  • 1 cup almond flour Can be substituted with other flours
  • 1 large egg Bind the ingredients together
  • 1 teaspoon garlic powder For added flavor
  • 1 teaspoon Italian seasoning Herb flavoring
  • Salt and pepper to taste To season the mixture

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Wash the zucchinis and use a grater to shred them finely. Place them in a clean kitchen towel or cheesecloth and squeeze out excess moisture.
  3. In a large mixing bowl, combine the drained zucchini, mozzarella cheese, Parmesan cheese, almond flour, egg, garlic powder, Italian seasoning, and salt and pepper. Mix until well combined.
  4. Line a baking sheet with parchment paper. Use your hands to form the mixture into stick shapes, about 1 inch wide and 4 inches long, placing them on the sheet.
Baking
  1. Bake the breadsticks in the preheated oven for 15-20 minutes, or until golden brown and crispy.
  2. Allow the breadsticks to cool slightly before serving. Pair them with marinara or your favorite dipping sauce.

Notes

These breadsticks can be stored in an airtight container in the fridge for up to 3 days or frozen for a month. To reheat, bake at 350°F (175°C) for 10 minutes.
