Preparation
- In a large pot, heat a tablespoon of olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes, or until translucent.
- Incorporate the minced garlic and stir for an additional minute until fragrant.
- Toss in the chopped zucchinis, stirring occasionally for around 5-7 minutes until slightly tender.
- Pour in the vegetable broth and bring the mixture to a gentle boil.
- Once boiling, reduce the heat and let it simmer for about 10 minutes.
- Remove the pot from heat. Add the fresh basil leaves to the pot and blend everything using an immersion blender until smooth.
- If you don’t have an immersion blender, carefully transfer the mixture in batches to a regular blender.
- Taste and adjust the seasoning with salt and pepper as needed. Serve warm, and enjoy this creamy bowl of goodness!
Notes
For a special twist, add a splash of lemon juice or replace some zucchini with other seasonal vegetables like carrots or sweet potatoes. Don't overcook the zucchini to retain some texture.
