Ingredients

Main Ingredients
  • 2 medium zucchinis, chopped
  • 1 cup fresh basil leaves
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Olive oil for sautéing

Method

Preparation
  1. In a large pot, heat a tablespoon of olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes, or until translucent.
  2. Incorporate the minced garlic and stir for an additional minute until fragrant.
  3. Toss in the chopped zucchinis, stirring occasionally for around 5-7 minutes until slightly tender.
  4. Pour in the vegetable broth and bring the mixture to a gentle boil.
  5. Once boiling, reduce the heat and let it simmer for about 10 minutes.
  6. Remove the pot from heat. Add the fresh basil leaves to the pot and blend everything using an immersion blender until smooth.
  7. If you don’t have an immersion blender, carefully transfer the mixture in batches to a regular blender.
  8. Taste and adjust the seasoning with salt and pepper as needed. Serve warm, and enjoy this creamy bowl of goodness!

Notes

For a special twist, add a splash of lemon juice or replace some zucchini with other seasonal vegetables like carrots or sweet potatoes. Don't overcook the zucchini to retain some texture.
