Preparation
- In a large bowl, whisk together the olive oil, fresh lime juice, minced garlic, chili powder, salt, and pepper.
- Add the peeled and deveined shrimp to the bowl and toss them in the marinade. Let them sit for about 15-20 minutes.
- Thread the marinated shrimp onto the skewers, leaving a little space between each shrimp for even cooking.
Cooking
- Preheat the grill to a high temperature.
- Place the shrimp skewers on the grill and cook for 2-3 minutes per side, or until the shrimp are opaque and have nice grill marks.
Serving
- Remove the kabobs from the grill, garnish with fresh cilantro, and serve with extra lime wedges.
Notes
For extra flavor, marinating the shrimp for an hour is recommended. Avoid overcooking to prevent toughness.
