  • 1 cup couscous
  • 1 cup vegetable or chicken broth
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice freshly squeezed is best
  • 1/2 cup grated Parmesan cheese
  • 1 piece lemon for zest
  • to taste Salt and pepper
  • to garnish Fresh parsley, chopped for garnish

Method
 

Preparation
  1. In a medium saucepan, bring the vegetable or chicken broth to a boil over medium heat.
  2. Once boiling, stir in the couscous. Remove from heat, cover, and let sit for about 5 minutes until the couscous absorbs the liquid.
  3. After the couscous has absorbed all the broth, use a fork to fluff it up gently.
Finishing
  1. Drizzle in the olive oil, lemon juice, and lemon zest. Mix well to combine, ensuring the couscous is evenly coated.
  2. Stir in the grated Parmesan cheese until melted and well combined.
  3. Taste and add salt and pepper as needed.
  4. Transfer to a serving bowl, garnish with fresh parsley, and enjoy!

Notes

For added flavor, feel free to swap out parsley for other fresh herbs like dill or chives, fold in cooked peas, diced bell peppers, or cherry tomatoes for extra color. This dish tastes great chilled in salads or reheated as a quick side.
