  • 1 pie crust 1 pie crust Make sure your pie crust is Halal-friendly.
  • 2 cups 2 cups mixed winter vegetables (such as kale, spinach, butternut squash, and mushrooms) Feel free to substitute with other vegetables.
  • 6 large 6 large eggs
  • 1 cup 1 cup heavy cream or milk Use heavy cream for a richer flavor.
  • 1 cup 1 cup shredded cheese (such as cheddar or Gruyère)
  • to taste Salt and pepper to taste
  • 1 tablespoon 1 tablespoon olive oil
  • 1 teaspoon 1 teaspoon dried thyme (optional) Optional for added flavor.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Place the pie crust in a 9-inch pie dish. If you’re using a pre-made crust, follow the package instructions for pre-baking.
  3. In a skillet over medium heat, add olive oil. Sauté the mixed winter vegetables for about 5-7 minutes until they are tender. Add salt, pepper, and thyme for flavor.
  4. In a large bowl, whisk together the eggs and heavy cream (or milk) until smooth. Stir in half of the shredded cheese, along with additional seasoning to taste.
  5. Add the sautéed vegetables to the egg mixture and stir well to combine.
  6. Pour this filling into the prepared pie crust and sprinkle the remaining cheese on top.
Baking
  1. Place the quiche in the oven and bake for about 45 minutes, or until the center is set and the top is golden.
  2. Allow the quiche to cool for a few minutes before slicing. Serve it warm, or at room temperature.

Notes

Storing tips: Can be refrigerated for 3-4 days or frozen for up to 2 months. To reheat, pop slices back into a preheated oven at 350°F (175°C) for about 15-20 minutes.
