Preparation
- Preheat your oven to 375°F (190°C).
- Place the pie crust in a 9-inch pie dish. If you’re using a pre-made crust, follow the package instructions for pre-baking.
- In a skillet over medium heat, add olive oil. Sauté the mixed winter vegetables for about 5-7 minutes until they are tender. Add salt, pepper, and thyme for flavor.
- In a large bowl, whisk together the eggs and heavy cream (or milk) until smooth. Stir in half of the shredded cheese, along with additional seasoning to taste.
- Add the sautéed vegetables to the egg mixture and stir well to combine.
- Pour this filling into the prepared pie crust and sprinkle the remaining cheese on top.
Baking
- Place the quiche in the oven and bake for about 45 minutes, or until the center is set and the top is golden.
- Allow the quiche to cool for a few minutes before slicing. Serve it warm, or at room temperature.
Notes
Storing tips: Can be refrigerated for 3-4 days or frozen for up to 2 months. To reheat, pop slices back into a preheated oven at 350°F (175°C) for about 15-20 minutes.
