Preparation
  1. Season the beef thoroughly with salt and pepper.
  2. In a large pot, heat olive oil over medium-high heat and sear the beef on all sides until browned.
  3. Remove the beef and set aside. In the same pot, add the onion and garlic, sautéing until fragrant, about 2-3 minutes.
Cooking
  1. Pour in the red wine, scraping the bottom of the pot to lift all those flavorful bits. Let it simmer for a minute.
  2. Return the beef to the pot along with beef broth, carrots, celery, and Worcestershire sauce. Bring to a boil.
  3. Reduce heat to low, cover, and let it simmer for 2-3 hours until the beef is incredibly tender.
  4. Before serving, taste and adjust seasoning if needed. Serve hot, garnished with fresh herbs.

Notes

For an even better result, choose high-quality beef for tenderness and flavor. Don’t rush the browning process to develop a deep color. For a thicker sauce, mix a tablespoon of cornstarch with water and add it towards the end. A slow cooker can be a great alternative if short on time.
