Preparation
- Season the beef thoroughly with salt and pepper.
- In a large pot, heat olive oil over medium-high heat and sear the beef on all sides until browned.
- Remove the beef and set aside. In the same pot, add the onion and garlic, sautéing until fragrant, about 2-3 minutes.
Cooking
- Pour in the red wine, scraping the bottom of the pot to lift all those flavorful bits. Let it simmer for a minute.
- Return the beef to the pot along with beef broth, carrots, celery, and Worcestershire sauce. Bring to a boil.
- Reduce heat to low, cover, and let it simmer for 2-3 hours until the beef is incredibly tender.
- Before serving, taste and adjust seasoning if needed. Serve hot, garnished with fresh herbs.
Notes
For an even better result, choose high-quality beef for tenderness and flavor. Don’t rush the browning process to develop a deep color. For a thicker sauce, mix a tablespoon of cornstarch with water and add it towards the end. A slow cooker can be a great alternative if short on time.
