Preparation
- Preheat your oven to 425°F (220°C).
- In a large bowl, toss the diced sweet potatoes with 1 tablespoon of olive oil, smoked paprika, garlic powder, salt, and pepper. Spread them on a baking sheet in a single layer.
Cooking
- Roast the sweet potatoes in the preheated oven for about 15 minutes until they are tender and slightly caramelized.
- Meanwhile, heat the remaining tablespoon of olive oil in a skillet over medium heat. Add chicken pieces, season with salt and pepper, and cook for about 7-10 minutes, until cooked through and golden brown.
- Toss in the broccoli florets and bell pepper, and sauté for another 3-4 minutes until slightly tender.
Serving
- In bowls, layer the roasted sweet potatoes, cooked chicken, and veggies. Garnish with fresh parsley and enjoy!
Notes
For a vegetarian option, substitute chicken for grilled tofu or chickpeas. Ensure not to overcrowd the baking sheet for perfect caramelization.
