Ingredients
  

For the Bowls
  • 2 large sweet potatoes, peeled and diced
  • 1 lb chicken breast, cut into bite-sized pieces
  • 2 tablespoons olive oil divided
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup broccoli florets
  • 1 large bell pepper, diced
  • Fresh parsley for garnishing

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss the diced sweet potatoes with 1 tablespoon of olive oil, smoked paprika, garlic powder, salt, and pepper. Spread them on a baking sheet in a single layer.
Cooking
  1. Roast the sweet potatoes in the preheated oven for about 15 minutes until they are tender and slightly caramelized.
  2. Meanwhile, heat the remaining tablespoon of olive oil in a skillet over medium heat. Add chicken pieces, season with salt and pepper, and cook for about 7-10 minutes, until cooked through and golden brown.
  3. Toss in the broccoli florets and bell pepper, and sauté for another 3-4 minutes until slightly tender.
Serving
  1. In bowls, layer the roasted sweet potatoes, cooked chicken, and veggies. Garnish with fresh parsley and enjoy!

Notes

For a vegetarian option, substitute chicken for grilled tofu or chickpeas. Ensure not to overcrowd the baking sheet for perfect caramelization.
