Ingredients

Main Ingredients
  • 1 pound cooked white beans (like great northern or cannellini)
  • 1 pound boneless, skinless chicken breast (shredded or diced)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (4 oz) diced green chilies
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper, to taste
  • 4 cups chicken broth
  • 1 cup heavy cream (or a lighter cream option)
Toppings
  • Fresh cilantro, for garnish
  • Optional: shredded cheese, avocado, or tortilla chips for serving

Method

Cooking
  1. In a large pot, sauté the diced onion over medium heat until it becomes translucent, about 5 minutes.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Stir in the shredded chicken (or diced turkey) and let it heat through, about 3-4 minutes.
  4. Add the cooked white beans, diced green chilies, chicken broth, cumin, chili powder, salt, and pepper. Stir well to combine.
  5. Bring the mixture to a gentle simmer and let it cook for 15 minutes, allowing all the flavors to meld.
  6. Finally, stir in the heavy cream and let it heat for an additional 5 minutes before serving.
  7. Serve with your favorite toppings, such as fresh cilantro, shredded cheese, or sliced avocado.

Notes

For an extra creamy dish, add more heavy cream or cream cheese. Experiment with spices for added heat. For a vegetarian option, substitute the chicken with additional beans or lentils and use vegetable broth.
