Preparation
- Gather all ingredients on your countertop. Make sure to have your pumpkin puree, feta cheese, and cream cheese at room temperature for easy mixing.
- In a mixing bowl, combine 1 cup of pumpkin puree, 4 oz of crumbled feta cheese, and 1/4 cup of softened cream cheese.
- Add in 2 tablespoons of olive oil, 1 tablespoon of lemon juice, and 1 clove of minced garlic to the mixture.
- Using a hand mixer or food processor, blend the mixture until it is silky smooth. If using a fork or whisk, be prepared for a bit of a workout!
- Finally, sprinkle in salt and pepper according to your preference.
- If you like, top with fresh herbs before serving for a burst of color and flavor.
- Transfer to a serving bowl, and you’re ready to delight your guests!
Notes
For substitutions, experiment with low-fat cream cheese or Greek yogurt. Allow the dip to chill for an hour before serving to enhance flavors. For storage, keep in an airtight container in the refrigerator for up to 3 days or freeze for up to a month. Reheat in short intervals, stirring in between.
