Ingredients

For the whipped feta
  • 8 oz feta cheese, crumbled Use high-quality feta for the best flavor.
  • 1/4 cup cream cheese, softened
  • 1/4 cup Greek yogurt
  • 1 tbsp olive oil
  • Dash of salt and pepper Adjust according to taste.
For the crostini
  • 1 baguette sliced into 1/2-inch pieces Brush with olive oil before toasting.
  • Hot honey, for drizzling Adjust according to spice preference.
  • Fresh herbs (like thyme or parsley) for garnish

Method

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Place the baguette slices on a baking sheet. Brush each slice with olive oil and toast in the oven for about 5-7 minutes or until golden and crispy.
  3. In a mixing bowl, combine the crumbled feta cheese, softened cream cheese, Greek yogurt, and a pinch of salt and pepper. Use a hand mixer or stand mixer to whip until smooth and creamy.
Assembly
  1. Spread a generous layer of the whipped feta mixture onto each toasted baguette slice.
  2. Drizzle a bit of hot honey over the feta-topped crostini. Adjust the amount depending on how spicy you want it.
  3. Sprinkle with fresh herbs for presentation and added flavor.
  4. Serve warm or at room temperature.

Notes

Store the whipped feta in an airtight container for up to 3 days, but the crostini are best enjoyed fresh. If reheating, refresh toasted baguette in the oven at 350°F (175°C) for a few minutes before serving.
