Ingredients
  

For the Whipped Feta
  • 200 g Feta cheese, crumbled
  • 100 g Cream cheese, softened Allow to soften at room temperature for easier blending.
  • 2 tablespoons Olive oil
  • 1 tablespoon Lemon juice, freshly squeezed
  • 2 tablespoons Fresh herbs (such as dill or parsley), finely chopped
For the Crostini
  • 1 loaf Baguette or crostini, sliced Slice into 1/2-inch thick pieces.
  • to taste Salt
  • to taste Pepper

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Arrange sliced baguette on a baking sheet.
Toasting the Baguette
  1. Brush each slice lightly with olive oil and sprinkle with salt and pepper.
  2. Bake for about 5-7 minutes or until golden brown and crisp.
Whipping the Feta
  1. In a bowl, combine crumbled feta, softened cream cheese, olive oil, lemon juice, and a sprinkle of salt and pepper.
  2. Whip until smooth and creamy using a hand mixer or food processor.
Mixing in the Herbs
  1. Gently fold in the chopped fresh herbs.
Assembling
  1. Spread a generous dollop of whipped feta onto each toasted baguette slice.
  2. Top with additional herbs, a drizzle of olive oil, or a sprinkle of chili flakes if desired.
Serving
  1. Serve immediately while crostini are warm.

Notes

Store whipped feta in an airtight container in the refrigerator for up to 4 days. Reheat crostini at 350°F (175°C) for a few minutes to regain crispiness before adding whipped feta.
