  1. Start by cutting the watermelon into bite-sized cubes.
  2. In a large bowl, combine the cubed watermelon with crumbled feta cheese, chopped mint leaves, and thin slices of red onion.
  3. In a small bowl, whisk together the olive oil, fresh lime juice, salt, and pepper. Drizzle the dressing over the salad.
  4. Using a large spoon, toss everything together gently to ensure the feta doesn’t crumble too much.
  5. Allow the salad to sit for about 15 minutes to let the flavors meld, then serve it chilled.

Notes

For added crunch, consider adding roasted pumpkin seeds or sunflower seeds. Prepare the salad just before serving to maintain freshness, and avoid using a watermelon with seeds.
