Preparation
  1. Cut the watermelon in half, then slice each half into thick wedges. Remove the rind from each wedge, and cut them into fry-shaped sticks.
Making the Dip
  1. In a medium bowl, combine the coconut milk, lime juice, honey or maple syrup, lime zest, and salt. Whisk until well blended and smooth.
Serving
  1. Arrange the watermelon fries on a serving platter, and place the coconut lime dip in a small bowl for dipping. Enjoy immediately!

Notes

Store leftover watermelon fries in an airtight container in the refrigerator for up to 1 day. The dip can be refrigerated for up to three days; whisk in a little coconut milk before serving to restore consistency. Look for firm, juicy limes for the dip.
