  1. Start by choosing a ripe, seedless watermelon. Look for one that feels heavy for its size, and check for a uniform shape.
  2. Slice the watermelon in half, lengthwise. Using a spoon, scoop out the flesh carefully, creating watermelon balls or cubes. Reserve the peel to use as a bowl!
  3. In a large mixing bowl, combine your watermelon pieces, chopped mint leaves, and mixed berries. If desired, gently fold in crumbled feta cheese for a savory twist. Add a pinch of salt to elevate the flavors.
  4. Fill the empty watermelon rind with the mixture. You can create layers or just pile it high—it’s all about presentation!
  5. Finish off with lime wedges around the serving platter. These perfect little accents add an extra zing when it’s time to dig in!

Notes

For best results, prepare the watermelon right before serving to keep it fresh and vibrant. Store leftovers in an airtight container in the refrigerator for about 2-3 days. Avoid using overripe melons as they can turn mushy.
