Cooking Steps
- In a large pot, heat a drizzle of oil over medium heat. Add the diced chicken breast, season with salt and pepper, and sauté until golden brown and cooked through, about 5-7 minutes. Remove and set aside.
- In the same pot, add the chopped onion, garlic, carrots, and celery. Cook for about 5 minutes, or until the vegetables are tender and fragrant.
- Pour in the chicken broth and bring to a gentle boil.
- Add the orzo pasta and cooked chicken back to the pot. Stir everything together and allow it to simmer for about 10 minutes, or until the orzo is al dente.
- Taste and adjust seasoning. Serve hot, garnished with fresh parsley!
Notes
Leftover soup can be stored in an airtight container for up to 4 days. For long-term storage, freeze in batches without orzo for up to 3 months. Reheat on the stovetop, adding broth or water for consistency.
