  • 1 lb chicken breast, diced Use halal compliant chicken if needed.
  • 1 cup orzo pasta
  • 4 cups chicken broth Halal compliant broth recommended.
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method
 

Cooking Steps
  1. In a large pot, heat a drizzle of oil over medium heat. Add the diced chicken breast, season with salt and pepper, and sauté until golden brown and cooked through, about 5-7 minutes. Remove and set aside.
  2. In the same pot, add the chopped onion, garlic, carrots, and celery. Cook for about 5 minutes, or until the vegetables are tender and fragrant.
  3. Pour in the chicken broth and bring to a gentle boil.
  4. Add the orzo pasta and cooked chicken back to the pot. Stir everything together and allow it to simmer for about 10 minutes, or until the orzo is al dente.
  5. Taste and adjust seasoning. Serve hot, garnished with fresh parsley!

Notes

Leftover soup can be stored in an airtight container for up to 4 days. For long-term storage, freeze in batches without orzo for up to 3 months. Reheat on the stovetop, adding broth or water for consistency.
