  • 1 cup unsalted butter, softened Make sure butter is softened properly for best texture.
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 cups all-purpose flour Can substitute half with whole wheat or almond flour.
  • 1 cup chopped walnuts
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened unsalted butter, granulated sugar, and brown sugar until light and fluffy (about 3-4 minutes).
  3. Blend in the vanilla extract.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add this mixture to the butter and sugar mixture until well combined.
  5. Gently fold in the chopped walnuts until evenly distributed.
  6. Using a tablespoon or cookie scoop, portion out the dough onto a baking sheet lined with parchment paper, leaving enough space for spreading.
  7. Bake for 10-12 minutes, or until the edges are golden brown.
  8. Allow them to cool on the baking sheet for about 5 minutes before transferring to a wire rack.

Notes

For chewier cookies, take them out of the oven slightly earlier. Store in an airtight container for up to one week or freeze for up to three months.
