Walking Taco Casserole

A delicious twist on a classic favorite, this casserole combines seasoned beef, crispy tortilla chips, and melted cheese into a hearty meal that is easy to prepare and family-friendly.

Ingredients
  

Main Ingredients
  • 1 lb ground beef (or lean ground turkey) Can substitute with ground turkey for a lighter dish.
  • 1 packet taco seasoning
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 2 cups tortilla chips Use more for a crispier topping.
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup diced tomatoes (fresh or canned)
  • 1 cup sour cream
Optional Toppings
  • jalapeños
  • green onions
  • guacamole
  • salsa
  • cilantro

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the ground beef until it’s browned, about 5-7 minutes. Drain any excess fat.
  3. Add the taco seasoning and mix well, then stir in the black beans and corn. Cook for another 3-4 minutes until heated through.
Layering
  1. In a greased casserole dish, spread half of the tortilla chips at the bottom.
  2. Add half of the seasoned meat mixture, then sprinkle one cup of shredded cheese on top.
  3. Repeat the layers with the remaining tortilla chips, the rest of the meat mixture, diced tomatoes, and finish with the remaining cheese.
Baking
  1. Cover the dish with foil and bake in the preheated oven for 20 minutes.
  2. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
Serving
  1. Allow to cool slightly before serving. Top with your favorite toppings such as sour cream, jalapeños, or guacamole, and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months. To reheat, thaw in the refrigerator overnight, then bake at 350°F for 25 minutes.
