  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 3/4 cups buttermilk
  • 1/2 cup melted butter
  • 1 teaspoon vanilla extract
For the Toppings
  • 1 cup fresh strawberries, sliced
  • 1 cup blueberries
  • 1 cup bananas, sliced
  • 1 cup whipped cream or yogurt Optional
  • Maple syrup for drizzling

Method
 

Preparation
  1. Plug in your waffle iron to preheat.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, beat the eggs and add the buttermilk, melted butter, and vanilla extract. Combine well.
  4. Pour the wet mixture into the dry ingredients and stir until just combined (a few lumps are okay).
Cooking
  1. Grease your waffle iron with cooking spray and pour in the batter. Cook according to the manufacturer's instructions until golden brown and crispy.
Assembly
  1. On a large serving platter, stack the waffles. Top with sliced strawberries, blueberries, and bananas.
  2. Drizzle with maple syrup and add whipped cream or yogurt if desired.
  3. Serve warm.

Notes

For a gluten-free version, substitute with a 1-to-1 gluten-free flour blend. Let waffles cool on a wire rack for extra crispiness.
