Fudge Base
  • 2 cups sugar
  • 1/2 cup unsalted butter
  • 1 cup heavy cream
  • 1 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup chopped nuts (walnuts or pecans)
  • 1 pinch salt

Preparation
  1. Prepare Your Baking Dish: Line an 8-inch square pan with parchment paper, leaving some overhang for easy removal.
  2. Combine Ingredients: In a medium saucepan, combine sugar, butter, and cream. Heat over medium heat until the mixture comes to a boil.
  3. Add Maple Syrup: Once boiling, stir in the maple syrup and pinch of salt. Keep cooking while stirring constantly for about 5 minutes.
  4. Check Temperature: Using a candy thermometer, cook until the mixture reaches the soft-ball stage (around 235°F or 113°C).
  5. Add Nuts and Vanilla: Remove from heat and let it cool slightly. When it cools to about 200°F (93°C), stir in the vanilla extract and chopped nuts.
  6. Pour into Pan: Pour the mixture into the prepared pan and spread it evenly.
  7. Let it Set: Allow the fudge to cool at room temperature for about 2 hours, or until set.
  8. Cut and Serve: When cooled, lift the fudge out of the pan using the parchment paper overhang. Cut into squares and enjoy!

Notes

Use good quality ingredients to enhance flavor. Stir constantly while cooking to prevent burning, and use a candy thermometer for best results. Experiment with different nuts for variations.
