Vegetarian Lasagna with Spinach & Ricotta

Ingredients
  

Pasta and Sauces
  • 9-12 sheets Lasagna noodles Use traditional or no-boil noodles.
  • 3 cups Marinara sauce You can use store-bought or homemade.
Vegetables and Seasonings
  • 5 cups Fresh spinach, rinsed and chopped Make sure to drain excess moisture.
  • 3 cloves Garlic, minced
  • 1 medium Onion, chopped
  • 2 tbsp Olive oil For sautéing.
  • Salt To taste.
  • Pepper To taste.
Cheeses
  • 15 oz Ricotta cheese
  • 2 cups Mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
Binding Agent
  • 1 large Egg Helps bind the cheese filling.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large pot of boiling salted water, cook lasagna noodles according to package directions until al dente. Drain and set aside.
  3. In a skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
  4. Add garlic and continue to cook for another minute.
  5. Stir in the fresh spinach and cook until wilted, about 3 minutes. Remove from heat and let cool slightly.
Combine Filling
  1. In a mixing bowl, combine ricotta cheese, egg, half the mozzarella, cooked spinach mixture, salt, and pepper. Mix until well combined.
Layering
  1. In a baking dish, spread a thin layer of marinara sauce on the bottom.
  2. Place a layer of noodles over the sauce.
  3. Evenly spread half of the cheese mixture over the noodles.
  4. Layer with more marinara sauce, followed by another layer of noodles, the remaining cheese mixture, and more sauce.
  5. Finish with a final layer of noodles, marinara sauce, and sprinkle the remaining mozzarella and Parmesan cheese on top.
Baking
  1. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes, until cheese is bubbly and golden.
  2. Let the lasagna cool for 10 minutes before slicing. Serve and enjoy!

Notes

For best results, let the lasagna sit after baking to allow flavors to meld. Consider adding sautéed mushrooms or zucchini for extra flavor.
