Preparation
- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- In a mixing bowl, beat together the solid coconut oil and granulated sugar until it becomes fluffy.
- Add the pureed strawberries, plant-based milk, and vanilla extract. Mix until well combined.
- In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
- Gradually combine the dry ingredients with the wet mixture, stirring until a dough forms.
Baking
- Scoop the dough using a tablespoon and roll it into balls. Place them on the prepared baking sheets, leaving space for spreading.
- Flatten each ball slightly with your palm. Sprinkling some additional sugar on top for added sweetness is optional.
- Bake in the oven for about 10-12 minutes or until the edges are lightly golden.
- Once baked, remove from the oven and allow to cool on the baking sheet for a few minutes before transferring them to a wire rack.
Notes
To keep cookies fresh, store in an airtight container at room temperature for up to 1 week. They can be frozen for up to 3 months. Thaw at room temperature or microwave for a warm center.
