Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup coconut oil (solid) Can substitute with plant-based butter.
  • 1 cup granulated sugar
  • 1 cup pureed strawberries
  • 1/4 cup plant-based milk
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a mixing bowl, beat together the solid coconut oil and granulated sugar until it becomes fluffy.
  3. Add the pureed strawberries, plant-based milk, and vanilla extract. Mix until well combined.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  5. Gradually combine the dry ingredients with the wet mixture, stirring until a dough forms.
Baking
  1. Scoop the dough using a tablespoon and roll it into balls. Place them on the prepared baking sheets, leaving space for spreading.
  2. Flatten each ball slightly with your palm. Sprinkling some additional sugar on top for added sweetness is optional.
  3. Bake in the oven for about 10-12 minutes or until the edges are lightly golden.
  4. Once baked, remove from the oven and allow to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

To keep cookies fresh, store in an airtight container at room temperature for up to 1 week. They can be frozen for up to 3 months. Thaw at room temperature or microwave for a warm center.
