Ingredients
  

For the Danish
  • 1 sheet vegan puff pastry, store-bought Check for vegan labeling
  • 1 cup strawberries, sliced Fresh strawberries work best
  • 2 tablespoons sugar Adjust to taste
  • 1 tablespoon cornstarch For thickening the strawberry filling
  • 1 teaspoon vanilla extract Adds flavor
  • 1 tablespoon lemon juice Enhances flavor
  • plant-based cream cheese or cashew cream Optional for a richer filling
  • powdered sugar Optional, for dusting

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a medium-sized bowl, mix the sliced strawberries with sugar, cornstarch, vanilla extract, and lemon juice. Set aside for about 10 minutes.
  3. On a lightly floured surface, roll out the vegan puff pastry sheet to about ¼ inch thickness.
  4. Cut the rolled pastry into rectangles or squares, about 4-5 inches wide.
  5. Place a spoonful of the strawberry mixture in the center of each pastry piece. Optionally spread a thin layer of plant-based cream cheese or cashew cream on the pastry before adding strawberries.
  6. Fold the pastry edges over the filling to create a pocket, crimping the edges with a fork to seal.
Baking
  1. Place the filled pastries on a lined baking sheet and bake in the preheated oven for about 15-20 minutes or until golden brown.
  2. Allow to cool slightly before dusting with powdered sugar.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. For longer storage, freeze before baking and thaw to bake later. To reheat, bake at 350°F (175°C) for about 10 minutes.
