Ingredients
  

For the base
  • 1 cup pitted dates Soaked in warm water for 10 minutes
  • 1/2 cup natural peanut butter
  • 1 cup roasted peanuts Sprinkled over the base
  • 1/2 cup cocoa powder
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
For the chocolate coating
  • 1/4 cup dark chocolate chips
  • 1 tablespoon coconut oil

Method
 

Preparation
  1. Soak your pitted dates in warm water for about 10 minutes to soften them.
  2. In a food processor, blend the soaked dates, cocoa powder, maple syrup, and vanilla extract until smooth.
  3. Add the creamy peanut butter and mix until fully incorporated.
  4. Line a square baking dish with parchment paper and press half of the date mixture into the bottom.
  5. Sprinkle the roasted peanuts over the date mixture evenly.
  6. Spread the remaining date mixture over the peanuts to form the second layer.
Coating and Setting
  1. Melt dark chocolate chips with coconut oil in a microwave-safe bowl or double boiler until smooth.
  2. Pour the melted chocolate over the top layer and spread it evenly. Tap the dish gently to remove air bubbles.
  3. Refrigerate the bars for at least an hour to set before cutting into squares.

Notes

Store in an airtight container in the refrigerator for up to a week. Can be frozen for up to three months. Thaw in the fridge before enjoying.
