Preparation
- Soak your pitted dates in warm water for about 10 minutes to soften them.
- In a food processor, blend the soaked dates, cocoa powder, maple syrup, and vanilla extract until smooth.
- Add the creamy peanut butter and mix until fully incorporated.
- Line a square baking dish with parchment paper and press half of the date mixture into the bottom.
- Sprinkle the roasted peanuts over the date mixture evenly.
- Spread the remaining date mixture over the peanuts to form the second layer.
Coating and Setting
- Melt dark chocolate chips with coconut oil in a microwave-safe bowl or double boiler until smooth.
- Pour the melted chocolate over the top layer and spread it evenly. Tap the dish gently to remove air bubbles.
- Refrigerate the bars for at least an hour to set before cutting into squares.
Notes
Store in an airtight container in the refrigerator for up to a week. Can be frozen for up to three months. Thaw in the fridge before enjoying.
