Preparation
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly with coconut oil.
- In a large bowl, combine the almond milk, melted coconut oil, maple syrup, and vanilla extract. Stir until evenly mixed.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt. Ensure there are no lumps!
- Gradually pour the dry ingredients into the wet mixture, stirring gently until just combined. Do not overmix; a few lumps are acceptable.
- Carefully fold in the raspberries.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
Baking
- Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
Notes
Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months. Reheat at 350°F for 5-7 minutes or microwave for 20-30 seconds.
