Ingredients

  • 1 lb mushrooms, sliced Any variety of mushrooms can be used.
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
Liquids
  • 4 cups vegetable broth
  • 1 can diced tomatoes Use canned tomatoes for added flavor.
Spices and Seasoning
  • 2 tsp thyme
  • 2 tsp paprika
  • to taste Salt and pepper
Cooking Oil
  • 2 tbsp olive oil For sautéing.

  1. Slice the mushrooms, chop the onion, and mince the garlic to prepare your ingredients.
Cooking
  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, stirring occasionally until the onion becomes translucent, about 5 minutes.
  2. Add the diced carrots and celery, cooking for an additional 5 minutes until they soften slightly.
  3. Stir in the sliced mushrooms and cook for about 7-8 minutes, allowing them to brown and release their juices.
  4. Mix in the thyme, paprika, salt, and pepper, ensuring the vegetables are well-coated.
  5. Pour in the can of diced tomatoes and the vegetable broth. Stir well and bring to a gentle boil.
  6. Reduce the heat to low and let the stew simmer for 15-20 minutes to meld the flavors.
  7. Taste and adjust seasoning if needed before serving hot, topped with your favorite garnishes.

Notes

For added flavor, don't hesitate to use a mix of mushroom varieties. Letting the stew sit before serving boosts its taste even more. This recipe is also great for meal prep.
