  • 8 oz 8 oz (225 g) pasta of your choice (penne, fusilli, or spaghetti)
  • 4 cloves 4 cloves of garlic, minced
  • 1 cup 1 cup (240 ml) vegetable broth
  • 1 cup 1 cup (240 ml) unsweetened plant milk (almond, soy, or oat)
  • 4 tbsp 4 tbsp nutritional yeast for that cheesy flavor
  • 2 tbsp 2 tbsp olive oil
  • 1 tsp 1 tsp onion powder
  • 1 tsp 1 tsp smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Method
 

Cooking the Pasta
  1. Start by boiling a pot of salted water. Once boiling, add the pasta and cook according to package instructions until al dente. Drain and set aside.
Sautéing the Garlic
  1. In a large pan, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant but not browned.
Preparing the Sauce
  1. Add the vegetable broth, plant milk, nutritional yeast, onion powder, smoked paprika, salt, and pepper to the pan. Stir well and let it simmer for about 5-7 minutes until slightly thickened.
Combining
  1. Add the drained pasta to the sauce, stirring well to coat. Cook for an additional 2-3 minutes until everything is heated through.
Serving
