- Soak cashews in water for at least 2 hours.

- Blend on high until the mixture is smooth and creamy, scraping down the sides as needed.
- Taste the dressing and add salt and pepper as desired, adjusting the taco seasoning for a more robust flavor.
- Transfer the dressing into a jar or bowl, ready to serve over salads, tacos, or roasted veggies.
Notes
Leftover dressing can be stored in an airtight container in the fridge for a week. Shake before use as it may thicken. For longer storage, freeze in ice cube trays.
