  • 1 cup raw cashews (soaked for at least 2 hours) Soak cashews for at least 2 hours for a creamy texture.
  • 1/2 cup water
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon lime juice
  • 1 tablespoon taco seasoning Adjust to taste.
  • 1 clove garlic
  • to taste salt and pepper

Method
 

Preparation
  1. Soak cashews in water for at least 2 hours.
  2. Drain the cashews and add them to a blender with 1/2 cup water, apple cider vinegar, lime juice, taco seasoning, and garlic.
  3. Blend on high until the mixture is smooth and creamy, scraping down the sides as needed.
  4. Taste the dressing and add salt and pepper as desired, adjusting the taco seasoning for a more robust flavor.
  5. Transfer the dressing into a jar or bowl, ready to serve over salads, tacos, or roasted veggies.

Notes

Leftover dressing can be stored in an airtight container in the fridge for a week. Shake before use as it may thicken. For longer storage, freeze in ice cube trays.
