Preparation
  1. In a large mixing bowl, combine the peanut butter, rolled oats, and maple syrup. Stir until well combined and a sticky dough forms.
  2. Line an 8×8 inch baking dish with parchment paper. Pour the mixture into the dish and press down firmly to create an even layer.
Melting Chocolate
  1. In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring after each until smooth.
  2. Pour the melted chocolate over the pressed peanut butter mixture. Spread evenly to cover the top.
Setting
  1. Place the pan in the refrigerator for about an hour until set.
  2. Once set, remove from the pan, slice into bars, and enjoy! Top with a sprinkle of sea salt if desired.

Notes
