- In a large mixing bowl, combine the peanut butter, rolled oats, and maple syrup. Stir until well combined and a sticky dough forms.
- Line an 8×8 inch baking dish with parchment paper. Pour the mixture into the dish and press down firmly to create an even layer.
Melting Chocolate
- In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring after each until smooth.
- Pour the melted chocolate over the pressed peanut butter mixture. Spread evenly to cover the top.
Setting
- Place the pan in the refrigerator for about an hour until set.
- Once set, remove from the pan, slice into bars, and enjoy! Top with a sprinkle of sea salt if desired.
Notes
Store your Vegan Chocolate Peanut Butter Bars in an airtight container in the refrigerator for up to a week. For longer storage, freeze in portions wrapped tightly in plastic wrap.
