  • 2 large large carrots, chopped
  • 2 large large potatoes, diced
  • 1 onion, chopped
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Method
 

Preparation
  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes or until translucent and fragrant.
  2. Toss in the chopped carrots and diced potatoes, stirring well for another 5 minutes to coat them in the lovely oil and onion mixture.
  3. Add the vegetable broth to the pot and bring to a gentle boil.
  4. Lower the heat and let it simmer for about 15-20 minutes, or until the carrots and potatoes are tender.
  5. Using an immersion blender, puree the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup to a regular blender in batches.
  6. Taste the soup and add salt and pepper as desired.
  7. Ladle the soup into bowls, garnish with fresh herbs if using, and enjoy!

Notes

Feel free to use sweet potatoes for a different flavor or add celery or bell peppers for texture. Allow the onion to sauté fully for best flavor, and taste as you season to avoid underseasoning. This soup stores well in the refrigerator for 4-5 days and can be frozen for up to 3 months.
