  • 1 large head broccoli, cut into florets
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can coconut milk (14 oz)

Method
 

Preparation
  1. In a large pot, heat a dash of olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until it starts to soften.
  2. Toss in the minced garlic and cook for another minute, stirring constantly to avoid burning.
  3. Add the broccoli florets and vegetable broth, bringing the mixture to a gentle boil. Cook for about 10 minutes, or until the broccoli is tender.
  4. Remove the pot from heat and let it cool slightly. Then, carefully transfer the soup to a blender and blend until smooth.
  5. Return the blended soup to the pot and stir in the coconut milk. Keep warm until ready to serve. Add salt, pepper, and lemon juice to taste before serving.

Notes

For extra richness, consider adding nutritional yeast. Almond or cashew milk can be used as alternatives to coconut milk. Ensure the broccoli is tender before blending to achieve the perfect creaminess.
