- Remove the pot from heat and let it cool slightly. Then, carefully transfer the soup to a blender and blend until smooth.
- Return the blended soup to the pot and stir in the coconut milk. Keep warm until ready to serve. Add salt, pepper, and lemon juice to taste before serving.
Notes
For extra richness, consider adding nutritional yeast. Almond or cashew milk can be used as alternatives to coconut milk. Ensure the broccoli is tender before blending to achieve the perfect creaminess.
